ONION MADDUR VADA

INGREDIENTS:
1. 1 Cup Fine Soji(Chiroti Rave),
2. 1 Cup Rice Flour,
3. 1 Cup Maida,
4. 2-3 Big Onions,
5. 3-4 Green Chillies,
6. Coriander Leaves,
7. Curry Leaves,
8. Salt to Taste,
9. 1tsp White Thil,
10. 1tsp Cumin Seeds,
11. 1tsp Red Chilli Powder,
12. Hing,
13.Oil to fry.

METHOD:
1. Heat the Kadai,add little ghee to mix & warm Soji,Maida & Rice Flour.
2. Take Onions,chillies,Coriander leaves,Curry leaves & chop finely.
3. Add Thil,Cumin Seeds,Hing,Chilli Powder & Salt to the mixture.
4. Take broad mouth vessel,mix everything nicely & smoothly without adding     water.
5. If needed sprinkle water as onions only will leave water & the dough after soaking might become soggy.
6. Make a ball with the dough & smear oil nicely so that it will not get dried.
7. The Dough has to be soaked for 1-2 hours in air tight container.
8. Heat the oil in a thick bottomed Kadai,take a small ball of dough & press softly to a round shape by keeping it on the palm.Smear little oil to the palm before pressing.
9. It can be made of desired size but it has to be even.
10. Deep fry it in a medium flame till it is golden brown & crispy.
11. Keep it in airtight box when it is cool.
