BAIGAN KI BARTHA

INGREDIENTS:
1.1 Big Purple Colour Brinjal.
2.2 Onions.(Finely Chopped)
3.2 Tomatoes.(Grated)
4.1 Tsp Red Chilli Powder.
5.1 Tsp Dhania(Dry Coriander) Powder.
6.1 Tsp Jeera(Cumin Seeds) Powder.
7. Haldi.
8.1Tsp Guud(Jaggery) Powder.
9. Salt To Taste.
10.1 Tsp Amchur.

TADKA:
2 Tsps Oil,1 Tsp Jeera, Hing,Curry Leaves.

METHOD:
1.Pressure cook or Microwave the Brinjal by chopping to 4-6 Pieces.
2.Mash it nicely & keep it aside.
3.Prepare Tadka & Fry Chopped Onions. Add Grated Tomatoes & fry nicely.
4.When it starts leaving the Kadai add Mashed Brinjals,Masalas,Salt & sugar. 5.Boil nicely by adding water if required.
6.Garnish with Coriander Leaves.
